Recipes

Chicken Enchiladas Ingredients: 3 boneless, skinless chicken breasts, cooked and shredded 1 can mild enchilada sauce 1 cup sour cream 1 cup cheddar cheese, shredded 1 package flour or wheat tortillas Preparation: Mix all ingredients reserving about ¼ can of enchilada sauce. Spoon mixture onto edge of tortilla and fold together, folding one end into middle. Place side by side in baking dish. Pour reserved sauce over enchiladas. Sprinkle with more shredded cheese if desired. Bake at 350 about 25 minutes. Corn Salsa Ingredients: 1 can diced tomatoes 1 can corn 1 can black beans 1 small bunch chopped fresh cilantro as desired 1 cup Italian Salad Dressing Preparation: Stir ingredients together.

Stairs and Anatomy

Connelly can go up and down stairs. I have a video of him doing it but of course it won't upload, so you don't get to see him. I took my first anatomy test last week and I found out I got a 85% on it. THat is okay but still sucks because I really need an A in the class so I can do worse in the lab. The lab midterm is in two weeks so I'll have to study really hard and see how that goes, after that midterm, I'll feel better if I do good in the lab test.

Newport, RI

So I talked about the first two days of our trip back East but I failed to mention the place were were staying. We stayed in Newport, RI and it was pretty. I guess it was a dead season. Half or more of the shops were closed. It is known for the summer season. The population in the summer doubles or more. We walked along the cliff walk for a mile or so. It went for about 4 miles along the coast. This is the bridge you go from Jamestown to Newport on. At night it lights all up and is beautiful. You have to pay $2 every time you go across it and then $2 when you come back. I'm sure the locals have a pass or discount called the EZ pass, but I don't know how much that is. Mom and Connelly out in the bitter cold, and that day it wasn't as cold as the prior two days. The prior two days, we stayed in the condo ALL DAY!!! That way we were warm, and didn't spend too much money. The food there was ridiculously expensive. You all know how Frugal I am. I am Frugal on vacation too.

My new chair

My Mom gave Connelly this new chair. It is just his size. He likes to sit in it but he also loves to haul it around like a prized chair should be.

Boston and New York

So the first two days of our vacation we walked all over. We first went to Boston, MA and walked the freedom trail. We probably walked about 6 miles or more. Nate and Mom were worn out. Boston was great. We had good jacket weather and saw alot of buildings that were from the early part of our countries history. Paul Revere's home, Faneuil Hall, Quincy's Market (FOOD, food, and more food in there.) The Old Meeting House where they protested the tax on tea, and lost of other things. We loved it. Nate of course wanted to see Fenway park. We just were able to walk around it. The doors were closed and of course it isn't baseball season so nothing was going on. We saw this "Cheers" sign and thought it would be fun to take a pix. While in Boston we parked at the Boston Common park, which is the oldest public park. That is where the freedom trail starts. Then this building is the Massachusetts State House. The dome on top of the building is made of 23 carat gold leaf. Th
